Recipes

🍹 Cucumber Mint Sparkler

Ingredients:

  • 1 cucumber, thinly sliced

  • 1 handful fresh mint leaves

  • 1 lime, sliced

  • Sparkling water or club soda

  • Optional: 2 oz gin per serving

Instructions:

  1. Muddle cucumber, mint, and lime in a pitcher.

  2. Fill with ice, add sparkling water, and stir.

  3. For cocktails, add gin to individual glasses before pouring.


🥗 Watermelon, Feta & Arugula Salad

Ingredients:

  • 4 cups arugula

  • 2 cups watermelon, cubed

  • ½ cup feta, crumbled

  • ¼ red onion, thinly sliced

  • 2 tbsp olive oil

  • 1 tbsp honey

  • Juice of 1 lime

  • Salt & pepper to taste

Instructions:

  1. Whisk olive oil, lime juice, honey, salt & pepper.

  2. Toss arugula, watermelon, red onion, and feta with dressing just before serving.


🍤 Citrus-Herb Grilled Shrimp Skewers

Ingredients:

  • 1½ lbs large shrimp, peeled & deveined

  • 2 tbsp olive oil

  • Zest and juice of 1 lemon

  • Zest and juice of 1 orange

  • 1 tbsp chopped parsley

  • 1 tsp garlic, minced

  • Salt & pepper

Instructions:

  1. Marinate shrimp in all ingredients for 30 minutes.

  2. Thread onto skewers and grill 2–3 minutes per side.

  3. Serve with lemon wedges and aioli (mix mayo, garlic, lemon juice).


🍚 Orzo Salad with Roasted Corn & Tomatoes

Ingredients:

  • 1½ cups orzo, cooked & cooled

  • 2 ears corn, grilled or roasted and cut off the cob

  • 1 cup cherry tomatoes, halved

  • ¼ cup basil, chopped

  • 2 tbsp olive oil

  • 1 tbsp red wine vinegar

  • Salt & pepper

Instructions:

  1. Combine orzo, corn, tomatoes, and basil.

  2. Whisk olive oil, vinegar, salt & pepper, then toss with salad.

  3. Chill until ready to serve.


🍋 Mini Lemon Curd Tartlets

Ingredients:

  • 12 mini phyllo shells (or pre-baked tart shells)

  • ½ cup lemon curd (store-bought or homemade)

  • ½ cup fresh berries (blueberries, raspberries, or blackberries)

  • Powdered sugar for dusting (optional)

Instructions:

  1. Spoon lemon curd into tart shells.

  2. Top with berries.

  3. Dust with powdered sugar before serving.
